Here’s a quick little recipe

that I used to make fairly often during camping trips when the boys were younger…
Chicken Quesadillas
 
I cooked two boneless chicken breasts with a little onion / green pepper [frozen] mixture and a little water until tender. I drained it, then shredded it with two forks, 
and added about a half a cup of prepared salsa.
Then I spread a little on a ten inch tortilla
  and topped with grated cheese before folding over and
 grilling both sides [Spray the grill pan!] 
until melted and toasty done. 
[You can easily use canned chicken or any leftover chicken you might have.]
I usually serve them with homemade guacamole and chips.
Yum.
And, oh-so-easy – and quick!
