I recognize that my posts

have been a little off schedule this week --- 

I've had a few very long days...

work, you know -

But I wanted to take a moment to share these 

St. Paddy's Day Cup Cakes!

 Fun!

And Easy!

I used a regular cake mix [substituting ginger ale for water] and swirled in a little green food coloring. I scooped it into muffin cups with an ice cream scoop [for uniform size.] Then I used canned frosting, again, adding some green food coloring into some... I sprinkled green sugar crystals on top and stuck some cute little toppers in...
