Everyday Goodness

The weather here in my neck of the woods is finally getting a little cooler [down in the 20*s recently – brrrr.] So we all know that means it’s CHILI TIME. I’ll admit we often go to the ‘ole chili spice packet for a quick pot of the good stuff, but when I have the time and really want to indulge in chili goodness I pull out my favorite chili cookbook from The Manhattan Chili Company. I LOVE THE NUMERO UNO!! But also think the pepper goodness of Green Chili cannot be beat, so I’m making a pot this week and will share the goods with you:

Green Chili with Pork
Heat:
1/4 cup olive oil in heavy dutch casserole. Add and cook for ten minutes:
  • 2 large yellow onions, chopped
  • 8 medium garlic cloves, peeled and minced
  • 8 fresh jalapeƱos, stemmed and minced [I admit, I use 4 and it's still HOT]
  • 3 carrots, peeled and sliced crosswise into 1/2 inch pieces
Stir in and cook at least 20 minutes:
  • 1 and 1/2 tabelspoon dried oregano
  • 2 - 3 pounds boneless pork shoulder , cut into 1/2 inch cubes
Stir in and cook, stirring occasionally, for 1 and 1/2 hours:
  • 5 cups chicken stock
  • 1 teaspoon salt
  • 1 can [28 ounces] Italian plum tomatoes, crushed and well drained
  • 1 potato [about 8 ounces], peeled and grated
Add, and cook, stirring often, for an additional 30 -45 minutes:
  • 1 can [27 ounces] whole roasted green chiles, drained

Faith Based Pages

A favorite photo of mine from my heritage file…this is my aunt and three of my cousins. I first saw this photo at my aunt’s funeral back in the summer and thought – what sweet – sweet evidence of how she and her husband brought their children up to know the Lord. One of my cousins said, “Of course this [the photo] was staged – but we did this at Every. Single. Meal.“

How do you record different ways that you’re teaching your children about the Lord?

Instructions:
  1. Using yellow paper as the base, trim two inch strip from striped paper. Adhere approximately one inch from the right side of layout, as shown.
  2. Trim photo mat [8x6] and circle from red card stock. Adhere photo [7x5] and place all on layout approximately one inch from top and left side of layout.
  3. Place "Give Thanks" transparency under photo. [Make your won by using any print program: create two text boxes; in one type "Give Thanks" in a large font; in the other type your favorite scripture of thanksgiving in a smaller font. Layer these over each other and print on a transparency or clear sticker sheet. Trim and adhere to layout.
  4. Trim lined leave paper and adhere under quote. Trim 1/2 inch strip of green paper and place over bottom edge of leaf paper.
  5. Finish with circle placed to the left of green paper. Hand-write or print date with label maker.

God Speaks to Me

As many of you know I’ve spent A LOT of time in the car these last few weeks [months?!] and I’m blessed that my new car has XM radio [seriously – how great is it to listen to an entire show and not have ONE moment of static?!?] One of my favorite stations is XM 170 – Family Talk – I can listen to so many ministries on this channel including my favorite New Life program and many, many more! Recently, as I was traveling down the road for the umpteenth time to Montgomery, I listened to David Jeremiah and the Lord used him to bless my heart. As we approach Thanksgiving, he’s doing an entire series on gratitude and in this segment he spoke on how a Spirit-Filled Life equals a Life of Gratitude. What a truth is in this! Thanksgiving is about so much more than material things – as believers we are SO BLESSED to know without a doubt that our Lord is with us in all things, and that no matter what hardships come our way that in the end we will reside with our Lord and Savior – praising Him forever and ever! If we are truly ‘in-tune’ with Him, seeking His direction and spending time with Him then our lives will be filled with gratitude…

I was given a gift...

seeing the look of joy on Craig's face as he drove us up and down the river in his boat.It's an understatement to say I don't enjoy being on the river...
but going to the 'painted bluff' with him last weekend was an adventure -
and I'm glad I was there to look to the side and catch that glimpse of
happiness and pleasure in his eyes as we sped down the river...
